Binghamton University Acres first annual Harvest Festival
The campus was invited to the First Annual Binghamton University Acres Harvest Festival Thursday, Oct. 17. The all-day event included the chance for all students, faculty and staff to harvest the last of the fall season’s vegetable crop at Binghamton University Acres. OCCT provided bus transportation from campus to the farm, where tours and a lunch of pizza topped with locally grown vegetables was served.
Later in the day, during dinner service at CIW Dining Hall, most food served was locally sourced or grown at the farm. Local farmers tabled to speak to interested students about sustainable and organic farming, and students, faculty, staff and community members enjoyed an entirely locally sourced meal.
Some of the dishes created by Chef Manager Rich Herb with all ingredients from local food sources included 1,000 vegetable soup with fresh herb crostini, plum tomatoes with fresh mozzarella and basil and grass-fed beef medallion with New York cheddar cheese-stuffed portobello mushroom.
The festival was coordinated by student Jillian Shotwell, who transformed an idea into full-blown reality in less than one year. For more on the festival, read the full story in Inside.
